I have good news and bad news.
Bad news first.
Trader Joe’s discontinued Cashew Meal. As a former employee, I am well acquainted with the overly dramatic reactions of customers who discover that their “favorite item” has been “let go”. While I am bummed that now I have to find a new source for my preferred nut flour, I’m also happy to report that I did not verbally or physically accost the friendly TJ’s crew member who informed me of this tragedy.

Grocery/Recipe Tip: If you use one of my recipes that includes cashew meal, you can always sub almond flour (cheapest at Ralphs for $6.99/lb.) or oftentimes almond meal (TJ’s for 5.99/lb.)
Good news!
I have a simple and tasty recipe for you that DOES NOT include cashew meal.
This is a quick, colorful, flavorful side dish to add to any meal. Some suggestions include:
Breakfast: Add some chopped bacon or ham for an Egg-Free option or top with some poached eggs and sliced avocado!
Lunch: Delicious with some Tuna or Egg Salad.
Dinner: Serve with Roasted Chicken and Romesco Sauce for a filling and nutritious crowd-pleaser!
Spicy Shaved Brussels and Yams
2 medium yams, peeled, quartered, and sliced thin
1 lb. brussels sprouts, sliced thin (discard stems)
sprinkle of red pepper flakes
generous drizzle of olive oil
salt and pepper to taste
- Preheat oven to 375
- Toss ingredients with a drizzle of olive oil in a medium bowl.
- Spread evenly on a parchment lined cookie sheet.
- Bake 25 mins or until edges of veggies begin to brown and crisp.
