My name is Nikki and I am a Natural Chef with an emphasis on paleo cooking, ancestral diets, and general health support through whole, real foods. I graduated from Bauman College, a holistic nutrition and culinary arts academy. I began my health journey through a lifetime of allergies, intolerances, insecurities, and frustration. When I began to experiment with my food; the types, preparation, source, nutritional quality, etc, I began to fall in love with the creative and loving process of cooking. I hope to inspire healthy changes in others as I strive for this more balanced approach to food and life.

I personally follow a whole foods, gut-healing diet which, in a nutshell, includes meat, fish, eggs, nuts, seeds, vegetables, fruits, and tubers (see the Cheat Sheet). It is a grain/dairy/legume free diet which many studies show helps decrease inflammation in the body and promotes vitality and excellence in physical fitness and overall health.

I spend most of my days playing with my baby, practicing yoga, walking my giant St. Bernard (#tinyforpresident) and watching New Girl with my husband. I also enjoy hiking, biking, bouldering, dancing, and volleyball.

Carnitas Bowls for everybody! And by everybody, I mean all my super special clients who will be eating well this week 🌶 Mango Chili Lime Chicken Salad 🥑🍋🌶🥒
This was SO EASY to throw together.
The MVPs
1. Chili lime seasoning from Trader Joe's 
2. Mango Salsa from Costco (I blame @girlsgonewodpodcast for this discovery).
Marinate the chicken thighs in lemon/lime juice and chili seasoning before putting on the grill.
Chop up cucumber and shred some cabbage.
Mix together chopped grilled chicken, salsa, cuke, cabbage, and too with some avocado. ☀️🥗☀️🥗☀️ Geoff has decided to try the keto diet which means more toast for me 😏 Doin' it.
Had a bit of a meltdown last night and realized I need more life in my life.
Social media is awesome. I love sharing photos of healthy food, fun times, and my awesome family @theledfordcrew; but nothing replaces time with them, giving life and work my full attention, and cultivating my in-person relationships.
For Mother's Day, I'm giving myself the gift of presence and I'm going to do it for the whole month.
