This is a perfect (and simple!) addition to any summertime meal. It’s also compliant with my Gut Repair Protocol, which is awesome. I love making things that I can eat (unlike those chocolate chip cookies yesterday… I don’t want to talk about it).
Grapefruit Avocado Salad
1 medium cucumber, chopped
1 grapefruit, cut off peel and dice fruit
1 avocado, diced
2 Tbsp. chopped cilantro
1/2 lemon, juiced
salt to taste
- Toss all ingredients in a bowl.
- Serve with some lovely grilled fish. (Grilled Opah Pictured)
