Coconut Kale Smoothie

One of my favorite smoothies I’ve ever had is from an old natural foods cafe on Sunset Blvd. in Silver Lake.

In order to make this smoothie, you need a fresh young coconut, which is not something that I typically go out of my way to purchase.

Enter Trader Joe’s with their “coconut smoothie” drink which is young coconut water and meat blended together.

The Los Angeles smoothie gods smiled on me as I combined this Tj’s coconut drink with the other ingredients to make this delicious trip down memory lane.

Now you may be thinking, “Nikki, this looks delicious, but it’s sweater weather. I need some cozy fall vibes from my drink.”

I hear ya. I get that we are smack dab in the middle of autumn. But here’s the thing, I live in Southern California and it’s 80 degrees on this fine November afternoon. So I told my kids it was smoothies for dinner because I cannot with the oven right now.

Bless.
