Breakfast Cookies

When it comes to managing sugar cravings, one of my first pieces of wisdom is to start your day with a savory breakfast. Eggs, sausage, bacon, sautéed spinach, salsa… you get the idea. I’ve found with myself and with my family that the surest way to initiate the need to snack is to have sweet stuff first thing in the morning.

But sometimes, it’s really nice to sit down with a cup of coffee and a baked good. Here’s a (less) sweet option for those cozy mornings.

Breakfast Cookies

2 ripe bananas
1/2 c. nut butter
2 Tbsp. dairy-free milk
1 tsp. vanilla extract
1 c. almond flour
1 tso. baking soda
couple shakes of sea salt
1/2 c. favorite trail mix (chopped roughly if some pieces are large)
1/4 c. shredded apple
1/4 c. dark chocolate chips or chopped dates (optional)

fruit to slice for garnish (optional)

  1. Preheat oven to 350
  2. Blend together bananas, nut butter, vanilla and milk. ( I used an immersion blender, but you could use an electric mixer or food processor.)
  3. Add to the batter, almond flour, baking soda, and salt. Mix well.
  4. Fold in apple.
  5. Fold in trail mix and chocolate chips.
  6. Drop in large spoonfuls on parchment paper lined baking sheet.
  7. If using a garnish, slice and top batter before baking.
  8. Bake for 15 – 20 mins.
  9. Edges should be golden and center set.
