Fennel Mint Tuna Salad

Some of my favorite meals are completely accidental or born out of a mega change in plans or circumstance. This is one of those meals.

I had really great plans for a client’s weekly prep, but plans changed and we took the week off. The problem was, I had already purchased some ingredients for the menu but not others. I improvised at home and whipped up this fancy-pants lunch.

The ingredients are not at all typical of a tuna salad, but SHOULD BE. Oh man, it was so delightful and would work with chicken as well. Go ahead and get creative!

Fennel Mint Tuna Salad

3 cans Wild Planet albacore tuna (a Costco Favorite!)
1/3 c. Chosen Foods mayo (also a Costco Favorite!)
1/2 c. chopped fennel bulb
1 T. mint, chopped
1 green onion, diced
1/4 c. raisins
1/2 t. cumin
1/2 t. coriander
tahini drizzle
pine nuts to garnish

 

  1. Drain tuna and add to a large bowl.
  2. Add remaining ingredients and mix well.
  3. Serve with greens and pine nut/tahini drizzle garnish.
