Bacon Ranch Chicken Salad

I have found that one of the best ways to stick to eating real, whole foods is a crazy delicious sauce. Some people use ketchup, others are impossibly addicted to hot sauce. Whatever your preference, if dousing your broccoli in butter is going make you more likely to eat your veggies, then I say go for it!

This ranch sauce has been on repeat in my house. Not only is the sauce versatile, this salad is as well. While preparing it, I kept thinking of all the great combos I could have made had I only purchased all the necessary ingredients. Add apples for a sweet compliment to the salty bacon. Need a kick? Add some jalapeño! Ranch and BBQ sauce are another incredible pair. Which is why I chose the latter for my lunch that day.

Bacon Ranch Chicken Salad

4 chicken thighs, cooked and chopped
4 slices of bacon, cooked and chopped
1/4 red onion, minced
handful parsley, minced
2 celery stalks, chopped small
1/2 c. Dairy-Free Ranch

4 c. chopped romaine lettuce

  1. In a bowl, combine all ingredients and scoop on top of lettuce.

Optional:
sliced avocado
chopped apples
minced jalapeno
green onion, minced
BBQ Sauce
