It’s not often that I find a meal I want to eat everyday for the rest of my life. But these pancakes are seriously in the running. The best part is that they are totally on the menu for February’s Clean Slate!
Every year I set aside a month to do my Clean Slate protocol. It’s a chance for me to reset some habits and explore more variety in my meals and to push myself outside of my comfort zone.
In addition to keeping some of the junky things out of rotation, I’m stoked to be adding some more weight training back into my routine. My kiddo is starting to get pretty heavy and my back could use some more strength. I’m working my way through Breaking Muscle’s 40 days of Movement Challenge which allows me to control the amount of weight I lift, but gives me a template for what kinds of lifts to do over the 40 days and hopefully see measurable change! I’ve tweaked the programming a bit to incorporate some squatting and deadlifting (#booty).

Maca Plantain Pancakes
1 large yellow plantain
2 eggs
1/4 c. almond flour
1 tsp. maca powder
1 tsp. vanilla extract
sprinkle of sea salt
coconut oil for frying
- Place all ingredients (except coconut oil) into a blender and blend until smooth.
- Heat coconut oil and scoop 2 Tbsp. of batter into pan. Flip when edges start to brown.
- Continue until batter is gone. Top with my favorite super fruit jelly!
