Want a chocolatey treat without all the sugar? This grain-free, paleo-friendly granola will certainly do the trick. Eat it with your favorite yogurt or on top of a smoothie bowl!
Grain-Free Chocolate Granola
1 1/2 c. walnuts
1 1/2 c. coconut flakes (unsweetened)
1/2 c. macadamia nuts
1/4 c. cocoa powder
2 Tbsp. butter, melted
1/4 c. honey, melted
1 tsp. vanilla extract
1/4 c. hemp seeds
1/4 c. cacao nibs
1/2 c. raisins or dried blueberries
- Preheat your oven to 325
- In a food processor, pulse walnuts, coconut, and macadamia nuts until coarsely chopped.
- Add nuts to a bowl and toss with vanilla, melted butter and honey.
- Spread mixture out evenly onto a parchment-lined baking sheet and bake for 25-30 mins. Checking occasionally to make sure the edges aren’t burning (coconut can burn very quickly if your oven runs “hot”).
- Let cool and then toss with raisins, cacao nibs, and hemp seeds and store in a glass jar. Refrigerate if not used within a week.
