Grain-Free Chocolate Granola

Want a chocolatey treat without all the sugar? This grain-free, paleo-friendly granola will certainly do the trick. Eat it with your favorite yogurt or on top of a smoothie bowl!

Grain-Free Chocolate Granola

1 1/2 c. walnuts
1 1/2 c. coconut flakes (unsweetened)
1/2 c. macadamia nuts
1/4 c. cocoa powder
2 Tbsp. butter, melted
1/4 c. honey, melted
1 tsp. vanilla extract

1/4 c. hemp seeds
1/4 c. cacao nibs
1/2 c. raisins or dried blueberries

  1. Preheat your oven to 325
  2. In a food processor, pulse walnuts, coconut, and macadamia nuts until coarsely chopped.
  3. Add nuts to a bowl and toss with vanilla, melted butter and honey.
  4. Spread mixture out evenly onto a parchment-lined baking sheet and bake for 25-30 mins. Checking occasionally to make sure the edges aren’t burning (coconut can burn very quickly if your oven runs “hot”).
  5. Let cool and then toss with raisins, cacao nibs, and hemp seeds and store in a glass jar. Refrigerate if not used within a week.

Carnitas Bowls for everybody! And by everybody, I mean all my super special clients who will be eating well this week 🌶 Mango Chili Lime Chicken Salad 🥑🍋🌶🥒
This was SO EASY to throw together.
The MVPs
1. Chili lime seasoning from Trader Joe's 
2. Mango Salsa from Costco (I blame @girlsgonewodpodcast for this discovery).
Marinate the chicken thighs in lemon/lime juice and chili seasoning before putting on the grill.
Chop up cucumber and shred some cabbage.
Mix together chopped grilled chicken, salsa, cuke, cabbage, and too with some avocado. ☀️🥗☀️🥗☀️ Geoff has decided to try the keto diet which means more toast for me 😏 Doin' it.
Had a bit of a meltdown last night and realized I need more life in my life.
Social media is awesome. I love sharing photos of healthy food, fun times, and my awesome family @theledfordcrew; but nothing replaces time with them, giving life and work my full attention, and cultivating my in-person relationships.
For Mother's Day, I'm giving myself the gift of presence and I'm going to do it for the whole month.
