I don’t typically post a lot of grain-friendly recipes on this site, but I choose to include a few because I always want to support clean, nutritious, whole-food eating regardless of our respective “diets”. Some people just really jive with a more vegan/vegetarian approach and there are a bunch of great meal possibilities for you plant-based folks!
Here’s one of them that is perfectly suited for a quick lunch or a big weekend gathering! It also holds up well in the fridge for a few days so you can prep ahead of time or divvy it up among your weekday lunches!
For those who love quinoa AND meat, please feel free to chop up some chicken or add some cooked wild salmon to this for an extra boost of protein or Omega 3’s!

2 c. cooked quinoa
2 tomatoes, chopped
1/2 c. chopped cucumber
1/2 red bell pepper, seeded and chopped
1/4 c. feta cheese (optional)
2 Tbsp. olive oil
1 lemon, zested
1/2 lemon, juiced
salt and pepper
chopped parsley for garnish
- Toss all ingredients and garnish with parsley
