…Just kidding! This is the easiest of the easy. A SUPER simple lunch idea for you clean eating folks and a quick reminder that eating healthfully doesn’t have to be complicated, tasteless, or expensive.
My quick side dish to any yummy Mediterranean-flavored protein. Take a simple salt and pepper grilled chicken (add some lemon zest, oregano, garlic, and parsley if you’re feeling fancy) and toss this side salad to make a perfect and healthy lunch!
Simple Greek Olive Salad
1 handful of grape tomatoes, sliced in half
1 handful of chopped cucumber
1/2 bell pepper, seeded and chopped
2 Tbsp. store bought olive tapenade (check ingredients label for weird preservatives, mine was from trader joes)
- Lightly toss ingredients in a bowl and serve!
