Basil, Peach, and Bacon Salad

As we near the end of summer, I want to encourage you all to enjoy the fruits of the season in as many ways as possible!

Contrary to common knowledge, fruit isn’t just a snack or something you put in a smoothie. If you want to get really creative in the kitchen, use fruit in your main entrees and side dishes. People will think you’re super pro-fesh.

And try this delicious peach salad with your next grill-fest. It would pair well with pork ribs, grilled corn, bison burgers, or chicken thighs!

Peach, Basil, and Bacon Salad

Basil, Peach, and Bacon Salad

4 strips of cooked bacon (uncured, nitrate and nitrite-free!), chopped small
2 large peaches, pitted and chopped
5 large leaves of basil, rolled and chiffonade (see video below!)
1 avocado, pitted and chopped
1 scallion green, sliced thinly
2 Tbsp. olive oil
1 Tbsp. apple cider vinegar
1/2 lemon, juiced
sea salt to taste

  1. Toss ingredients in oil, vinegar, and juice until well coated.
  2. Season to taste.
  3. Serve chilled.

Here’s my video explaining how to “chiffonade”. Excuse my lack of enthusiasm in the explanation. I literally got ZERO hours of sleep the night before. I’ll step up my stage presence in my next tutorial 🙂
