Primal Pizza Frittata, The Clean Plate

Primal Pizza Frittata

12 eggs
2 tsp. italian seasoning
1 organic tomato, sliced
1/4 c. organic pizza sauce
handful of shredded organic mozzarella cheese
salt and pepper

optional toppings : pepperoni, black olives, sautéed mushrooms, italian sausage (cooked), fresh basil

  1. Preheat oven to 350
  2. In a bowl, whisk eggs with salt, pepper, and italian seasoning.
  3. Heat a skillet over medium and add a splash of olive oil.
  4. Pour egg mixture into skillet.
  5. Drizzle in pizza sauce.
  6. Top with tomatoes and cheese.
  7. Bake for 15 mins or until center is set.

Doin' it.
Had a bit of a meltdown last night and realized I need more life in my life.
Social media is awesome. I love sharing photos of healthy food, fun times, and my awesome family @theledfordcrew; but nothing replaces time with them, giving life and work my full attention, and cultivating my in-person relationships.
For Mother's Day, I'm giving myself the gift of presence and I'm going to do it for the whole month.
