This week, my clients received the benefit of my recent exploration of a local eatery. What a difficult self-imposed assignment… to be searching out delicious meals through out San Diego’s endless food scene. (ummm… kidding).
This salad was born in my new favorite MEATery, Sausage and Meat in the North Park/Hillcrest/University Heights area of San Diego. They have an unbelievable selection of tasty animals as well as an equally delicious variety of salads, cocktails, and specialty bacon flavors like Garlic Rosemary and Dark Chocolate (Honey Sriracha is my jam).
If you make the wise decision to visit this fine establishment, make sure to ask for Jessi. She’s a sweetheart and a serious FOODIE. Her guidance through the menu was very much appreciated (and she’s also a gluten-free eater so she can help anyone who needs to make modifications)!
Inspired by a magically delicious new San Diego restaurant, S&M sausage and meat (Find it on the menu as, Sweet Potato Potato Salad).
Three Potato and Bacon Salad
2 small purple sweet potatoes, peeled and medium chopped
2 small yams, peeled and medium chopped
2 small white sweet potatoes, peeled and medium chopped
2 Tbsp. dijon mustard
1/4 c. homemade mayonnaise
1/2 lb. bacon, cooked and chopped
1 green onion, chopped finely
2 Tbsp. chopped parsley
Radicchio or bibb lettuce optional (for cups)
- In a medium pot, boil enough water to cover chopped potatoes. Boil until easily pierced with a fork. Drain and cool.
- In a medium bowl, add mayo and dijon and stir until well combined.
- Add the rest of the ingredients and mix until well coated.
- Add chicken for a hearty meal or serve as a side dish at your next BBQ!
