While I am A paleo chef, I am not THE paleo chef. That domain name belongs to one, Mary Shenouda. She’s an LA based chef and lifestyle coach with a sassy, fun attitude and a wicked chocolate chip cookie recipe.

She shared it a few months ago on her instagram account and I decided to give it a try. They were ah-mazing. I may or may not have had 8 of them last night.

The Paleo Chef’s Chocolate Chip Cookies

1 c. cashew butter
1/2 c. coconut sugar
1 egg
1 tsp. vanilla
1 tsp. baking soda
1 c. enjoy life chocolate chips (click link for best price out there!)

  1. preheat oven to 350
  2. mix egg and sugar well.
  3. add remaining ingredients (except for the chocolate chips) and mix until smooth.
  4. fold in the chocolate chips.
  5. Use a cookie scoop to drop cookies onto a parchment or silicone lined baking sheet
  6. bake for 12-15 mins. (bottom edges will be golden).

All while the man-cub was napping 💣 Quick taco salad for lunch! I'm single momming it this week and have even less time to make actual meals for myself. This was easy with some chopped lettuce, Costco's mango salsa, Trader Joe's guacamole, leftover ground beef from dinner, lots of lime and cilantro.
