So, my neighbor has a huge banana tree in his front yard and it’s chock full of ripe bananas. I have no clue why they are not taking advantage of the free food on their property… but I will certainly take them off their hands. I mean, why leave them to the bugs when I can use them for delicious baked goodies?!
I’m a sucker for quick and easy recipes. This one beats them all. It’s fundamentally a 2-ingredient cookie! WHAT?! that’s cray! Thank you to Grok Grub for the awesome recipe.
I ate these for dessert AND for breakfast. They contain loads of healthy fats and carbohydrates!
I decided to add a little flair to them by using the Ben and Jerry’s Chunky Monkey ice cream as inspiration (best ice cream flavor EVER).
Chunky Monkey Cookies
1 banana
3/4 c. unsweetened shredded coconut
1/2 c. chopped walnuts
2 pinches of sea salt
optional: cinnamon or mini chocolate chips if you’re feeling frisky.
- Preheat oven to 375 and line a cookie sheet with parchment.
- In a food processor, pulse coconut, salt, and banana until gooey well mixed.
- pulse in walnuts until incorporated but don’t grind them down too much.
- Shape dough into small rounds and bake for 20-25 mins.
