Almond pulp. If you make your own almond milk, you’ve undoubtedly had the dilemma of, “what do I do with all this leftover pulp?”
Well, say hello to my Raw Goji and Cacao Bars. They are the perfect solution. They are also a delicious energy boost. Especially if you can eat them. I can’t, so I had smoked oysters instead. Not quite the same thing… but nutrient dense nonetheless.

Don’t worry if you have no almond pulp, just grind up some raw almonds in your food processor or vitamix.
Raw Goji and Cacao Bars
1 1/4 c. almond pulp (dehydrated)
12 medjool dates, blended into a paste (use less if the almond pulp is moist)
3 Tbsp. goji berries
2 Tbsp. cacao nibs
1 tsp. vanilla extract
1/4 tsp. sea salt
- Just mix all ingredients in a bowl or pulse gently in a food processor (you don’t want to grind down the berries or nibs).
- Press into a pan and chill.
- Cut into bars! Makes about 8 good-sized bars.
