Mediterranean Salmon Salad
2 cans wild salmon
1/4 c. sliced olives
1/4 c. diced red onion
2 Tbsp. chopped parsley
1/2 c. diced celery
1/4 c. homemade mayo
1 tbsp. whole grain mustard
salt and pepper to taste
Honey Mustard Salmon Salad
1/4 c. sliced green onion
1/2 c. diced green apple
1/4 c. sliced almonds or cashew pieces
1 Tbsp. chopped rosemary
1 Tbsp. homemade mayo
2 Tbsp. dijon mustard
1 Tbsp. honey
- Mix all ingredients in a bowl. Serve with avocado over greens or eat with plantain chips!
