Day 7 was a work day. So I was up in beautiful Los Angeles, cooking all morning. Unfortunately, (like I mentioned last post) I had not gotten a good night sleep, I was battling a headache, and feeling quite nauseous. So my meals were mostly an attempt to calm my stomach and keep me awake. Carbs, carbs, carbs. By the time dinner rolled around, the nausea was gone. Hallelujah!
Due to my tired state, I also took it easy with the exercise. I got out for a quick walk before heading to yoga. Can’t say that it was my favorite day of the Clean Slate, but sometimes that’s life, you know? In spite of days like that, I’ve gotta say that I am truly blessed to live in such a beautiful state, to have the resources to feed myself fresh and delicious food, and friends and family who love and care about me.

Clean Eats
Breakfast: turkey sausage, scrambled eggs, potatoes
Lunch: egg salad (recipe below) and a carb medley/nausea remedy of baked plantains, yams, and butternut squash
dinner: romaine salad with 2 chicken thighs, tomatoes, cucumber, kalamata olives, and champagne vinaigrette
other beverages: (decaf) almond milk latte, LOTS of water.
Easy Egg Salad
6 eggs, hard-boiled
1/4 c. homemade mayo
1/4 red bell pepper, diced
1 small persian cucumber, diced
2 Tbsp. chopped parsley
1 tsp. garlic powder
salt and pepper to taste
- Mash up the eggs and mix with remaining ingredients. Serve on a butter lettuce leaf, scoop with plantain chips, or eat straight out of the bowl!
