The Clean Slate Day 3 with Cilantro Hemp Pesto

Getting ready for my day with an almond milk latte (decaf, of course!)

Day 3 was chock full of good times and good eats. I had an early morning at my favorite Dana Point Coffee Shop, JC Beans. While enjoying a decaf almond milk latte and a cozy fireplace, I worked on the blog and did some reading before heading out on a walk. Dana Point has a beautiful harbor park with rolling green hills so it’s great for walking. Additionally, there is donation-based yoga in the park everyday at 10 am. Unfortunately, I could not join in the fun because I was on my way to cook some delicious items over at Thrive Juice Lab. If you are in the Orange County (heck, Southern California) area, you should definitely make your way over to this little health haven in Laguna Niguel.

They boast ALL ORGANIC juices, smoothies, acai bowls, salads, soups, and baked goodies. They offer primarily gluten-free, dairy-free, and soy-free products. Everything is super fresh (I know… cause I make it.) It’s also mostly vegan or vegetarian when it comes to the food, but there are a lot of paleo-friendly items as well (Check out the pesto down below!).

I walked a bunch today and didn’t have much time to train, but I did hit up the Detox Flow class at the yoga studio. It was the perfect amount of challenging and restorative. Just what I needed.

Clean Eats

Breakfast: Banana with almond butter and 6 oz. of Liquid Gold Juice from Thrive Juice Lab

Snack: A cup of diced tomatoes and cucumber with Cilantro Hemp Seed Pesto (see recipe below)

Lunch: Smoothie with strawberries, almond milk, kale, hemp seeds, maca, and goji berries

Snack: 4 oz. Seared sirloin with hot sauce and a half a handful of macadamia nuts

Dinner: Turkey and beef chili with 1/4 avocado and some steamed butternut squash


Cilantro Hemp Seed Pesto

2 bunches of Cilantro
1/2 c. hemp seed
1/2 c. ev olive oil
3 cloves of garlic
juice of two lemons
zest of 1 lemon, divided in half
salt and pepper to taste

water… if too thick

  1. Combine all ingredients in a food processor or high-speed blender (except for water, salt, pepper, and half of lemon zest.
  2. Add water if it’s too thick.
  3. Use over your favorite paleo noodles and garnish with remaining lemon zest.
  4. Add salt and pepper to taste

    First of all, yay. Second of all, thank you. Ok so kelp noodles, kale, tomato, and what else is in your salad mix? Also, do you cook or massage your kelp noodles? Also, lemme know next time your are ever in the hood. I’d love to connect. 🙂

      I just rinsed the kelp. It had cucumber, tomato, red onion in it. Lemon zest on top.
