It finally happened. I legitimately hurt myself at work.
When you’re a cook, there’s a general understanding that you are going to end up getting little nicks and burns here and there. For me, there has always been a nagging dread of the one day when occupational hazards and fate meet in one perfect pain storm… and that day was today.
I cut the tip of my thumb off. THE TIP OF MY THUMB! Gross? Definitely. Painful? For sure. Grateful that it wasn’t my entire finger? You bet. Sometimes, slicing a garlic clove isn’t as easy as it sounds. One slip of the knife and you will be dealing with a bum hand for a couple of weeks. It’s a bleak future (ok, that’s a bit short-sighted, but holy HECK my hand hurts). Let’s just say, showering is going to be awkward.
Well, enough of my complaining. And since you probably feel like eating now, here’s yet another NON-DESSERT recipe that is delicious and Summery and PALEO!

Pineapple Salsa
2 c. diced pineapple
1-2 medium tomatoes, seeded and diced
1 jalapeno, diced small
1/4 red onion, diced small
Juice of 1 lime
2 Tbsp. chopped cilantro
salt to taste
- Toss all ingredients in a bowl… that’s it.
