I was fortunate enough to spend this past Sunday having a picnic with my family. My Dad has a connection to a winery somewhat near his home in Ventura and we always seem to congregate there for any family gatherings. It’s a really beautiful and low-key place. You can bring all your own food and just hang out, eat, wine taste, and absorb some sun. Check out Old Creek Ranch Winery
Of course I brought some paleo fare to the cracker and cheese-fest. Beginning with some smoked salmon from my favorite fish market in Dana Point. Jon’s is the best! Followed by this delicious and refreshing Mango Blueberry Salsa. Finished off with some Peppermint Paleo Fudge (recipe to come) and some Chewy Paleo Brownies. My dad made the suggestion to spread the fudge on top of the brownies for a “frosting” like effect. I think I’ve mentioned 1 or 2 (or 12) times that my dad loves chocolate. That guy never misses an opportunity to amp up the cocoa intensity. Gotta love him.

Anyways… this post is not about chocolate. It’s about amazing summer fruit! This salsa is great on its own or with your favorite paleo “chip” (sweet potato, plantain, cucumbers, endive leaves… just to name a few). Or you could use it as a topping for some tacos. You could even eat it alongside your breakfast eggs. I don’t care HOW you eat it, the point is that you need to eat it. A super tasty experience awaits.
Mango Blueberry Salsa
1 pint blueberries
1 mango, skinned and chopped
1/2 – 1 jalapeno, seeded and diced
1-2 avocados, skinned and chopped
the juice of 1 lime
2 Tbsp. chopped cilantro
1/2 tsp. sea salt
- Simple instructions today… just mix it all in a bowl!
