This one is a revival from the archives of The Clean Plate. This pesto never fails to impress!
For example, I just recently used it for my husband’s graduation party. Believe me when I tell you that 20 lbs of chicken slathered in this delicious and beautiful sauce does not disappoint.

This sauce goes great with most meats and is especially delicious with yams, sweet potatoes, butternut, and kabocha squash. Another favorite application is stuffing it underneath the skin of chicken breasts/thighs before baking. This sauce is easy to make and also pretty inexpensive. Cilantro is usually less than a dollar a bunch and pistachio nut meats can be found at your local Trader Joe’s for around 4 bucks a bag. Have I sold you yet?! Basically what I’m saying is just make a big vat of it and keep it in your fridge for delicious planned dinners and the random condiment emergency!
Cilantro Pistachio Pesto
1 c. pistachios
2 c. cilantro leaves, packed
1 clove garlic, chopped
4 tsp. lemon juice
1 tsp. cardamom
3/4 c. olive oil
1/4 c. water or more to thin if needed
sea salt to taste
- In a food processor, blend all ingredients.
