Chocolate Pudding

Here’s a nice, cleaner version of the treat we all love:

Chocolate Pudding!

I have been making this pudding for as long as I’ve been paleo… longer actually. It’s from the wonderful Amy Green over at Simply Sugar and Gluten Free. Before I switched my diet to Paleo I was completely gluten-free. Amy is a very well-known blogger and author about gluten-free foods. So I’d like to pass this on to you because it’s really easy to make and satisfies the chocolate monster in all of us. And it’s a paleo treat. BONUS!

It’s great with some fried bananas, chocolate shavings, or toasted coconut shreds (or all three!).

Amy’s Chocolate Pudding

2 cans coconut milk (full fat or lite)
1/2 c. cocoa powder
1/2 c. honey
5 Tbsp. tapioca starch
2 tsp. vanilla extract
dash of salt

  1. In a small pot, add cocoa and starch. Stir until well combined.
  2. Add 1 c. of coconut milk and mix to form a paste.
  3. Turn on burner to medium-high heat and add remaining milk, vanilla, honey, and salt.
  4. Stir constantly until pudding begins to thicken and boil.
  5. Turn off heat.
  6. Eat warm, cold, or FROZEN! (It’s like a fudgesicle)

  1. Thanks for sharing my blog with your readers! The pudding is so yummy, isn’t it? I don’t think I tried freezing it…will have to do that.
    Hugs!

LAME DIET ADVICE // They say you're not supposed to eat carbs and fat together...🤔...🤣...🙄
#idowhatiwant #thisissounhealthy #paleosnackideas I'm not that big of a coffee snob, but I know good coffee when I taste it. ☕️❤️#traderjoesalumni #traderjoesnewproduct

Stopped by @lazyacresmarket_encinitas and grabbed this tonic to keep my immune system solid while my little guy fights a cold. I'm not gonna lie, it doesn't taste that good, but has some crazy good ingredients and so far I'm keeping all the germs from taking me down 👊🏻 Not upset about my breakfast situation.
GF sourdough open faced breakfast sandwich and bone broth with all the immune boosting goodies. #goodonya #northcountysd #needonedowntown
