Chocolate Chip Cookie Tart

Like a Pizookie… but I made it. So it’s a Nikki-cookie. Nikookie. Get it? Ok yeah. It’s a lame name. How about a cookie tart. It’s a chocolate chip cookie tart and it only has a few ingredients. Super EASY!

Cookie Monster would go NUTS

Chocolate Chip Cookie Tart

2 1/2 cups almond flour
3 tablespoons coconut oil
4 tablespoons honey
1/4 teaspoon sea salt
1/2 cup chocolate chips

  1. Preheat oven to 350 degrees.
  2. Line a 9 inch tart pan with parchment paper or grease the pan with a little coconut oil.
  3. Mix all ingredients except chocolate chips in bowl or food processor
  4. Fold in in the chocolate chips.
  5. Press evenly onto the pan.
  6. Bake for 18 minutes.
  7. OM NOM NOM NOM.

Top with Paleo Ice Cream.  You will thank me later.

    Looks great! Is it soft enough to cut with a pizza wheel or knife?

      Yes! My tart pan is the kind that has a bottom disc that seperates from the sides. So I just lifted out the tart and cut with a knife. A pizza wheel would work, but wait until it’s cooled to avoid crumbling.

  2. You’re a girl after my own heart! I’m a big cookie monster but haven’t eaten too many gluten free cookies that I like, these sound amazing!!! I’m just getting into the baking thing, cooking is my passion, but would love to create baked goods that are easy and gluten free delicious. So surprised you didn’t have to add eggs to keep it together! Will definately try!!!
